Grana Padano is one of the world's first hard cheeses, created nearly 900 years ago by monks in the Po Valley, is now produce by Zanetti Spa in Italy

The recipe and process of making Grana Padano is protected by its P.D.O. status (P.D.O stands for Protected Designation of Origin) and its a set of guidelines that insure the quality and authenticity of cheese sold under the name Grana Padano. Each wheel of Grana Padano is tested for aroma and flavor before it can be branded with the yellow-red P.D.O seal.

Grana Padano, made from unpasteurized milk, is a pale yellow cheese with an intensely sweet flavor and an unique granular texture formed during maturation.

 

Grana Padano is offered at 3 different maturation stages:

"Grana Padano" (9 to 16 months): texture still creamy, only slightly grainy
"Grana Padano oltre 16 mesi" (over 16 months): crumblier texture, more pronounced taste
"Grana Padano Riserva" (over 20 months): grainy, crumbly and full flavoured
